Steps to make Almond Tofu (Great for Toddlers):
  1. Simmer 300 ml water and dissolve 50 g sugar to make the syrup. Let it cool.
  2. Combine 250 ml water and the powdered kanten in a pot. Boil for 2-3 minutes.
  3. Add sugar into the pot from Step 2 and dissolve. Add milk. Stir briefly so that the mixture is cooked through (do not let it boil).
  4. Add vanilla extract.
  5. Pour into a wet tupperware or bowl and chill to harden.
  6. When hardened, make diagonal cuts to slice the jello into 2 cm diamonds.
  7. Pour the syrup over the jello.
  8. Chop the fruits into desired sizes and mix with the jello.

Almond tofu is a common and popular Chinese dessert in hot summer. It can be considered as the Chinese version of panna cotta. However Chinese almond tofu is healthier since there is no heavy cream included. Almond tofu in Chinese is 杏仁豆腐 (xing ren tou fu).
