Instructions to make लौकी के कोफ्ते (Restaurant style):
  1. सबसे पहले लौकी धो कर छील लें और कदूकस कर ले अब इसमें नमक डाल कर 5 मिनट क लिए ऐसे ही रहने दे।
  2. अब हाथ से दबा कर लौकी का जूस अलग बर्तन में कर ले (इस जूस को बाद में ग्रेवी में डाले) और लौकी अलग बर्तन में रखें इसमें कटा हरा धनिया, अजवाइन, नमक, लाल मिर्च और बेसन डाल कर मिलाएं। अब इसके छोटे गोल कोफ्ते बना ले।
  3. कड़ाई में तेल गर्म करें और बने कोफ्ते हल्की आंच पर पकाएं फ्राई करें गोल्डन होने तक। और पर निकाल ले।
  4. अब एक कड़ाई ले तेल गरम करें, जीरा, दालचीनी, तेजपत्ता, इलायची डाल कर भूनें। अब इसमें। साबुत लहसुन, मोटा कटा अदरक, प्याज, टमाटर, हरी मिर्च, काजू डाल कर भूनें। (6-7) मिनट तक।
  5. अब इसमें सभी मसाले डालकर 2-3 मिनट और भूनें। और गैस बंद कर से मसाला ठंडा होने दे।
  6. ठंडा होने पर मिक्सी में पीस लें पेस्ट बना लें।
  7. अब इस पेस्ट को उसी कढ़ाई में डाल दे और दही और लौकी का जूस डाल कर पेस्ट को अच्छे से भूनें।
  8. अब इसमें पानी डाल कर कढ़ाई को ढक कर पकाएं। (7-8) मिनट
  9. अब इसमें ये कोफ्ते डाल कर 5 मिनट तक पकाएं और गैस बंद कर दीजिए।
  10. दही और हरा धनिया और से गार्निश कर के सर्वे करे।
